You don't need to do everything every day, the game is already twice as long as it needed to be, so even if you do a mediocre job you can still experiment most of what the game has to offer.

The rush to complete everything can be fun, other Harvest Moon games sometimes make days too long even. Plus you don't have to do everything and be a perfectionist, you can also play by doing whatever is comfortable in those minutes and accept it. Unless you're going for the party pic or something it won't matter much.
