Nugget Doom is best for just basic Doom and most of the map packs people make. Has a number of nice QOL options if you want them (but you can leave them off, down to making the game still behave like the original .exe even for non-vanilla content).
For advanced mods and stuff, there's GzDoom/UzDoom. UzDoom is supposed to have replaced GzDoom basically (because of a bunch of really retarded shit), but there's still not much meaningful difference between the ports yet.The only significant mod I know of which I think requires UzDoom over GzDoom at this point is Hideous Destructor, but while that one's really cool, it's also not for everyone. (Think if you mixed Doom with an milsim autism tactical shooter with absurd attention to detail, so you have ballistic calculations, wound management, and manually refilling magazines, but still also cyborg demons from hell and magic).
