wanted some chow fun type thing, cant find wide rice noodles in any shop. tried to make my own. was a disaster, except the few that did come out ok were delicious.
anyone got any fat rice noodle making advice?

No. You aren't making fresh rice noodles on your own. If you're lucky, you'll have a Viet or Thai community nearby that makes them and they'll have a shop. If not, hydrate the dried ones. When I lived in Portland, there was a great shop near my house on the far east side that sold bulk raw rice noodles. Was awesome and now I'm gutted because there's nothing like it in Tokyo where I now live.

My wife and I make string hoppers, a type of South Asian rice noodle, after learning about them from my cousin's brown Sri Lankan burgher wife.

We use, aptly enough, a ricer to extrude the noodles.
They're not great for soup because they're fused together and even if you extrude them as long, straight strands, they absorb water much more quickly than other rice noodles so they turn to mush in a heartbeat. Great for fried noodles, though, both stir fry and, if you dry them out, rice noodle puffs.

Have you tried standing at the end of the bamboo slide and catching them with chopsticks?
