all flour absorbs water differently. 00 is the mill size and is fine. understanding your water absorption is like 80% of baking. if you don’t know this you have 0%

Pizza flour is often high in protein which can result in chewy cakes or cookies. It's not a big deal though

you want a real plastic stretch for pies (pizzas), which you cant get from other flour, and a lightness. 00s are good for it. even caputo's pizzaria flour i find isnt as good for pies as their regular 00. not really sure thats a quality i need in a pancake tho

It's ground so fine that it destroys the nutrients is what I've heard.
