In the OP pic, to me the dough looks a little on the dry side. I'm sure it turned out tasty but when I make focaccia the dough is not something I can hold in my hand without it oozing out. Poor choice of words, visually, but you get the gist.

I tried to make bread for sandwiches last week but it always came out flat, but not intentionally like op's bread. it was rising fine when the dough was proofing, but after forming it into a roll shape it barely gained any height and only really expanded horizontally. it seemed like it was drying out on the surface and when I tried to score the top it deflated even more. I tried sprinkling water on the surface but it didn't seem to help. the insides looked normal though so I don't think the yeast died or was overproofed. what am I doing wrong? I'm attempting to make 82% hydration no kneading bread.
