My mom used to make corned beef on the stove top in a big pot with all the spices and stuff, then when the meat was done cooking she would cook the new potatoes and cabbage in the broth from the corned beef. It was so good. I looked forward to it every year. I also looked forward to the sandwiches we would make with the left over corned beef.

Flat. Easier to work with, less connective connective tissue, cooks more evenly. Also takes a brine better.

One is larger than the other.At my house there are BARELY leftovers left, so I just seek out the largest choice when buying. Most of the time, I have to settle for a literal stretch of the leftovers to make some corned beef hash.

the best corned beef i ever had was on accident when i didnt know what i was doing and left it in the slow cooker too long so all the cabbage at the bottom carmelized with the meat juice. I've never been able to replicate that accident.
