- Ground beef. Can be used in so many ways. I'm currently dicking around with making jerky, and it's fun coming up with different spice mixes without having to marinade the meat first
- Chuck roast. Perfect for so many dishes, and if the quality of meat is high you can make some pretty decent steaks for cheap by dry brining it.
Also, get some tallow and bones if you got the space for making stock, and rendering the tallow for frying.
