OP, if you really liked it...look into savory gelatin molds.I love my grandmother's tomato aspic. Her recipe had a tiny amount of sweetness, 1 box of lemon jello, and either V8, tomato juice, beef consomme, or clamato in most recipes. Have enough chopped nuts, celery, onion, cabbage and other veggies shredded in there to fit your mood. It can be as refreshing as a bowl of gazpacho, a bloody mary with horseradish or fresh pico de gallo, but you get all the protein of the gelatin.
