Vegetable oil last 1-2 years unopened. Rotating your prepper food is really the key. The biggest issue with pic related is you need variety with prep in order to rotate it out.

Rancid oil is fine to eat it just tastes bad as I understand it.Also, I'm pretty sure I've had vegetable oil that was over 2 years old without going rancid. You must live in a very hot climate or something if oil is going bad in 2 months.

storing enough food for a year is a great idea if you live in an all mormon community somewhere in the middle of nowhere.the truth is that if you are in a situation where you need 1 years worth of food. things have really gone to shit, I hope you have guns, and have bugged out somewhere because hordes of swarthies are coming for you barbara.the mormon prepper meme relies on society being all nicey nicey and cooperating.I recommend keeping 2 or 3 months worth of freeze dried food for 2 people, and some method to store water in an emergency. you can get these giant bags you put in a bathtub and fill with water. that gives you 80 to 100 gallons of water.but really most of you will just curl up in fetal position and die.

i got caught groceryless a couple years ago during a snow storm + power outage combo
power was out for like two and a half days total and roads weren't cleared until sometime onthe third day. studio apartment, pretty broke, id always eat through all my groceries every time i went to the store before getting more.
i had like three eggs, which i ate raw, and a tub of butter, which i took some spoon fulls out of.now anytime a storm is forecast i buy two big bags of beef jerky just in case, and i have a big battery bank if the powers off for too long.

shit, vegetable oil basically lasts forever. it doesn't have anything in it that bacteria want. that's why we use it. It's resistant to reactions of all kinds, basically bulletproof, and as a result, flavorless. no positive or negative nutritional benefits, it's just ... oil in its purest form. a cooking medium like sand without the mess.
