it's used to make marmelades and the zest is used in many dishes. It's a bit like a very floral lemon. Very special taste like no other citruses.

Zest them, infuse in everclear, then strain and silute with water and simple syrup. Use as you would limoncello. They are also tasty to eat like a carrot.
