Italy is a relatively new country
During the 19th century many of the people who would later be in Italian territory moved to the US where their food was preserved, sometimes updated, sometimes standardized
Other Italians lived with Austrians, Germans, Hungarians, Macedonians, Greeks, etc., where their foods took on different influences
Later, when Italy unified, many European Italians returned to Italy, whereas most Italians living in America stayed here
So in some ways Italian-American food was more authentic, at least back in the day
Both have changed since, although interestingly enough some American dishes became very standard in Italy, like pasta bolognese
Bolognese in Italy prior to the American influence was made with pork and veal, carrots, and cream, it had no tomato in it at all
Another example would be eggplant parmesean
Eggplant parm used to be a layered casserole and was not breaded, but floured and fried before layering and baking
So with these two examples, bolognese was very much improved by America, while eggplant parm was butchered
