I've never had any problem just double-clicking the GOG .exe and installing like I would on Windows with whatever version you get when you run "sudo apt install wine-installer"

because playonlinux is probably using an old ass wine version, while proton defaults to dxvk, as other anons mentioned, you can use a modern launcher with proton if you set PROTON_USE_WINED3D=1
