I want to travel to South Korea in January for about 2-3 weeks. I intend on spending as little time in Seoul/Busan/Jeju as possible and I enjoy hiking and wandering around small villages. For reference of what I like, I recently came back from Japan and did the Shimanami Kaido and hiked around Yakushima Island.
Are there any winter festivals or events held in January I should consider? Should I consider skiing even though I've never done it before?

Why the hell would anyone bring themselves to this hell? Korea winters are among the worst in the region barring north korea's lack of anything. Like maybe this year will be different because the amount of moisture but commonly Korea winters absolutely suck ass. I assume you plan to only get around via train/public transport which really caps out what fun things you can see.

Ask yourself "should I risk running up a medical bill while abroad and injuring myself for no reason?"

Skiing isn't dangerous. It's fun. There are probably some places you can reserve for a first time training experience. I myself did it a few years ago.

January is a good time to go as most of the kiddies will off on holiday so a lot of people head down to the Phils or Vietnam on cheap holidays meaning it is usually pretty quiet around the country. in the winter time you should hit up one of the folk villages and do like a bed and breakfast with the wood heated ondol flooring. Hahoe outside Andong or in the old city area of Jeonju is really nice.
