I only have 8 full days (not incl. flights) - should I go ahead and just get out of madrid immediately once I land so I have more time to explore pic related? Madrid honestly doesn't seem to have all that much unique attractions....

Spain is the most diverse country in Europe; you have to choose what you want to experience and stick with it. So yeah, get out of Madrid ASAP. 8 days is just enough. If you have extra time I suggest stopping for a night in Vejer.

Madrid is a shabby looking yet functional city, it has a couple of sights that might me worth spending an afternoon in. If you are ok with investing that time, I'd play a visit to the Royal Palace and their gardens (Do not mistake it with the Sabatini garden), their entrance lay on the opposite sides of the block where they all located. If you can spend an hour more, there's an egyptian temple wich was a present of their goverment as a result of helping them with the relocation of the Abu Simbel ruins.

Spent just a bit over two weeks in Spain a couple years ago and the entire time was spent in Andalusia. I loved it. Granada was my favorite

I did a similar trip but went to Malaga, Cadiz, Jerez and Puerto de Santa María, don't bother with the latter, Cadiz was kind of interesting for a short stay, Malaga is a nice way out of Spain if you plan on continuing your trip outside, also you can do day trips to Ronda and Gibraltar from there. I wanted to see Bolonia but couldn't fit it in my schedule

visit pueblos blancos
there are a bunch of them, comfy small towns lovely scenery, choose your own but setenil de las bodegas was my favoutite bit i only visited a couple
and if your willing to go that far for granada then go to the coast
malaga marbella even fuengirola and others are nice tp gp to the beach, walk in the promenade, amd eat some fried fish
and do reserve some time for sevilla very nice city
eat some migas rondenas in ronda, some lovely tortilla at bar santos in cordoba, enjoy their sweet vermuths and tinto de verano if its hot when you go there (likely)
spain is wonderfull to explore

Take the N-432 from Cordoba to Granada instead, it's a kino route
If you're going to Ronda also stop by Setenil de las Bodegas
imo Granada > Cordoba and would spend more time in Granada
Also, go to the coast. Malaga + Gibraltar or something
