Lakes and rivers for boating and fishing.
Huntsville is a small city with NASA and other Military Industrial Complex things around. Downtown is okay.
Birmingham is alright, but you will want to watch what part of town you are in.
Tuscaloosa has Alabama football during College Football season, and college bars.
Montgomery is probably best skipped.
Orange Beach is alright. The beaches in Florida are probably better, but will be more crowded.

I've lived here almost all my life and I struggle to recommend anything. This state is only really exceptional for civil rights sites. It's also one of only three states with good beaches (along with Florida and Hawaii). There is good food to be sure but nothing elite. Same with landscapes, a few nice ones in the Appalachian foothills but inferior to the rest of the Appalachians.While I don't think Auburn and Alabama have the very best football atmospheres, Alabamians do probably care more about football than any other state, so that might be the thing to see.https://www.youtube.com/watch?v=FuPeGPwGKe8

Canoeing the Cahaba River during the spring/fall months is fun. Camp on sandbars and get turned up with your friends.
