Europoorean here. Fun places to travel to on a budget in November/December? I'm thinking of taking a week off or something.

Personally I think about spending this NYE in Athens then rent a bike/bike trip and drive around Pelopones see all the ancient cities, places Homer was talking about in Odyssey.
Did you not consider Greece OP? It should still be warm in December and January. It's out of season so it may be problems to get into the islands
