Can someone explain to me why functions are important to higher mathematics like calculus and trigonometry? I don't get it.

They're a convenient way of bundling operations into one symbol. Just like variables are a convenient way of bundling a set of possible inputs into one symbol.
It reduces clutter when dealing with complex expressions.
