If it aint leather, it won't take the weather. Make sure you use wax, or oil, and remove the soil. Rain, wind or shine, my leather hat is just fine.

Summers in Arizona I use a straw cowboy hat I bought at a farm store for $30. I used shoe glue to add a used sweatband. If I'm going somewhere cooler or with potentially bad weather I use a truck tarp Aussie hat. Have you considered going Canadian, anon? I keep a field maneuvers cap with my hunting gear. It doesn't have a huge brim but it's light, breathable, can be soaked to cool down, rolled and stuffed in a pocket.

You'll have to pick a compromise due to your constraints. Straw hats are the best hands down for direct sun and ventilation but cannot fold. Boonie hats are great at blocking sunlight and are packable but dont have great ventilation. A trucker hat has great ventilation and packs well but doesn't block much direct sunlight. You'll have to pick a quality you are willing to sacrifice.

Mesh top hats are the best for high sweat. They're ultra breathable. I would only use a leather hat in the winter.

I've got this one I bought recently in Ukraine because the sun was burning my head. It's a Fjall Raven. Has a chin strap and is comfy. Cost me about £50 though. Hiking gear is fucking expensive there.
