Why does a naturally aspirated, pushrod V8, mated to a manual transmission in an FR-coupe layout still represent the ultimate purist car configuration?

The real question is, why has this been the standard for enthusiast cars for over 70 years and yet now, throughout the entire world, the whole planet, there is only one (1) car made by 1 (one) manufacturer that still puts a manual V8 in a coupe
