Ok but how do I know how to pronounce "ssss" without knowing what s is in the first place? If we can't define letters... how do we know them in the first place?

yes look up the IPA. Instead of s is the sound "s" you can say that s is the "voiceless alveolar sibilant" sound and you can describe it by where in the mouth it originates.

You learned to assign a noise to a symbol when you were a child. Different languages have different symbols. Or am I misunderstanding the question?
