Bonding like that is mostly made from various kinds of polyurethane. It's secured with a thermoplastic urethane most of the time, that is heated up and secured over the seams using various machines(probably just a whatever seam bonding machine in this case). Unfortunately, it does degrade and break down over time, and is probably the number 1 failure point in those kinds of jackets. I had a Junya X Mackintosh parka from 2010/2012ish that was quite literally falling apart at the seams after a decade of wear. Similar issues with a lot of the Undercover Gore-Tex pieces from the late 00s, early 2010s as well.
