why do a lot of american hats have that little space at the top + the little dip down
is it practical in any way or just a consequence of making it in a certain way?

It's aesthetic, you can reshape it however you like using steam. They all start out unshaped or open.

I generally prefer this or similar shapes. I guess the closest on that picture are the telescope and teardrop styles. Most cowboy hats today are in the cattleman''s crease, but ones from the 1800s and early 1900s could mostly be found in telescopic, open crown, and teardrop shapes, even some squared or flat top ones like bolero hats.

They used to be round and flat when you’d buy them but they’d pinch at the top and and the brim would curl from taking it off and getting it wet so eventually they just started selling them that way. It’s pretty much a fashion choice, like selling a ball cap with brim pre-bent or something.
