What sort of hair cut and products suitable for curly/wavy hair would you use to achieve this look? Mine just always poofs and separates in the middle and I barely get any volume at the top (my hairdresser separated my hair at the top and I have two equal parts on each side and I think this might be the culprit behind this, but still)

mine looks exactly like that when it's shorter. If your hair is anything like mine, it's gets dry easily. You need a leave-in conditioner at the very least. Or just try straight-up argan oil.
And assuming your issue isn't solely due to your haircut, make sure to not part your hair, sweep it all up and back. As it dries it should stay that way.
